Ingredients (Serves 4):

1 kilogram curly cabbage
2 tablespoons olive oil
Sea salt
Black pepper
3 tablespoons chopped parsley
½ teaspoon grated nutmeg

Method:

To prepare it, start by shredding green or red cabbage and wash the leaves. Heat the oil in a large pot, add the cabbage, cover and cook on low heat until the leaves soften. Prepare a simple dressing with olive oil, lemon juice or vinegar, salt, and pepper. Drizzle the dressing over the salad just before serving and toss everything well to combine. Mix in the parsley and nutmeg, let it sit for 1 minute and Serve it chilled as a side dish or enjoy it as a light main course. The vibrant colours, crisp texture, and tangy flavour make this cabbage-based mixed salad both nutritious and satisfying for any occasion.
