Ingredients (Serves 1):
– 100g mixed whole grain pasta
– 1 head of broccoli
– A few lettuce leaves
– 1 bunch of watercress
– 3 carrots
– 2 1/2 tablespoons light mayonnaise

Instructions:
- Boil the pasta until cooked but not soft and let it cool
- Wash the broccoli and separate it into florets. Steam them and let them cool
- Wash the lettuce, dry it, and cut it into strips
- Wash the watercress, dry it, and add it to the pasta along with the lettuce strips and broccoli
- Roughly chop the carrots and mix them with the pasta
