Ingredients:

– ⅔ cup of pine nuts
– 140g watercress
– 1 peeled avocado, diced and without pit
– 2 chopped tomatoes
– 2 tablespoons olive oil
– 1 1/2 teaspoons white wine vinegar
– 1 teaspoon prepared mustard
– Salt and freshly ground black pepper

Instructions:

  1. Toast the pine nuts in a dry pan, stirring constantly. Place the watercress, avocado, and tomatoes in a bowl and pour over the toasted pine nuts.
  2. Make a dressing with the remaining ingredients and add seasonings to taste. Drizzle the dressing over the salad and serve.
