How to Prepare a Cucumber Salad with Pineapple
Ingredients (Serves 3):
280 g peeled cucumber, sliced thin
280 g fresh pineapple, peeled, with the hard core removed, and chopped
2 tablespoons light mayonnaise mixed with lemon juice
mint leaves for garnish
Instructions:
Place the cucumber in a strainer, sprinkle with salt, and let it sit for 4 minutes. Rinse off the salt and squeeze to remove excess water. In a bowl, mix the cucumber and pineapple.Let it chill for 2 hours and then add mayonnaise.Garnish with mint leaves and serve.
