Ingredients (2 Servings):
- 3 papayas cut in half and seeded
- 55 g unsalted butter
- 5 pieces of pickled ginger, chopped
- Juice and zest of 1 lemon
- 1 tablespoon ginger syrup

Method:
– Preheat the oven to 180°C.
– Place the papayas in a greased baking dish.
– Mix the butter and ginger with half of the lemon juice and zest.
– Pour the mixture over the papayas.
– Add the remaining lemon juice and zest, and then the ginger syrup.
– Bake until soft.
– Serve the grilled papaya warm or cold with a scoop of Greek yogurt or a sprinkle of chopped mint. For a chilled version, let it cool and serve with crushed ice or a fruit salad.
Optional Toppings:
Add chopped nuts, lime zest, or chilli flakes for extra flavor and contrast.
