Light Turkey Carbonara

Pasta carbonara with Turkey: Although carbonara is one of the easiest and most popular dishes, not only in its birthplace Italy but also in our country, it still generously gives us calories, which certainly do not excite us as much as its taste… Now, there is no need to deny ourselves, as there is a way to enjoy it in a lighter version!

  1. 150g pasta
  2. 1 tablespoon olive oil
  3. Salt and freshly ground pepper
  4. 1 tablespoon melted butter
  5. 40g bacon
  6. 3 yolks or 1 egg and 1 yolk
  7. 4 tablespoons cream
  8. 2 tablespoons sweet grated kefalotyri

  1. 150g whole grain pasta
  2. 1 tablespoon olive oil
  3. salt and freshly ground pepper
  4. 1 tablespoon soft margarine
  5. 30g boiled turkey
  6. 2 tablespoons light cream or milk
  7. 2 tablespoons low-fat grated cheese.

Instructions:

  1. Cook the Pasta: Boil the whole grain pasta in salted water until al dente. Drain and set aside, reserving a few tablespoons of pasta water.
  2. Prepare the Sauce Base: In a pan, heat olive oil and margarine over medium heat. Add the chopped turkey and sauté for 1–2 minutes.
  3. Make It Creamy: Stir in the light cream (or milk) and half of the grated cheese. Let it gently simmer for 1–2 minutes. Add a bit of pasta water if the sauce looks too thick.
  4. Combine and Season: Add the cooked pasta to the pan. Toss everything well so the sauce coats the pasta. Season with salt and freshly ground black pepper to taste.
  5. Serve: Sprinkle the remaining cheese on top and serve warm.
