Eggplants with Tomatoes: In a study conducted by the Agricultural Research Service of the U.S.A. (ARS), it was found that various varieties of eggplant contain 13 phenolic compounds that are very beneficial for our health and have antioxidant properties.
Its high fibre content aids in relieving constipation while simultaneously preventing the formation of haemorrhoids and colitis. It has few calories, no fat, and during digestion, it absorbs the fat from other foods, thus helping in weight loss.

Ingredients:
3 aubergines
8 tomatoes
1 or 2 tablespoons of olive oil
Oregano
Basil
Southern salad

Instructions:
- Wash the aubergines, slice them, sprinkle with salt and drain for 1 hour.
- Wash the tomatoes and slice them.
- Sauté the aubergines in olive oil.
- Arrange the aubergines and tomatoes alternately in a baking tray.
- Sprinkle with a little oregano and basil and bake at 200 degrees for 40 minutes.
- Serve with Southern salad.

A zesty salad made from black-eyed peas, corn, peppers, onions, and a vinegar-based dressing.
Tomato and Cucumber Salad
A refreshing side made with fresh tomatoes, cucumbers, onions, vinegar, and oil.
