Simple Hummus Soup Recipe

Ingredients:

2 tablespoon olive oil
4 garlic cloves, minced
1 can (400g) cooked chickpeas, drained and rinsed
3 cups of water or vegetable broth
4 tablespoon tahini
Juice of 2 lemons
2 teaspoons cumin
Salt and pepper to taste
Fresh parsley or paprika for garnish

Instructions:

Soak the chickpeas overnight in plenty of water. The next day, drain them and transfer them to a pot. Cover them with fresh water or vegetable broth. Simmer the chickpeas for two hours and let them soften completely. Drain them and keep the broth aside.

Place the softened chickpeas in a blender. Add the remaining ingredients and pour in some of the reserved broth. Blend everything until the mixture turns creamy. Add more broth if you want a thinner soup. Sprinkle in your favorite spices and grind plenty of black pepper for extra flavor.

Best Times to Eat Hummus Soup

Hummus soup is best eaten during the cooler months, like autumn and winter, because it’s warm, hearty, and comforting. However, you can enjoy it year-round, especially as a light, nutritious meal. It can also be used as a dip by blending it with less broth and used as starter in Meze or with vegetable snacks, such as carrots, celery, cucumber, zucchini, and sweet peppers.
